Well, my soon-to-be 5-year-old daughter has finalized her cake request.  I have just over 3 weeks to pull it off and pull it off in royal fashion.

The cake is to be a 3 tier round cake.  The bottom tier will be designed as a castle with towers and “gemstone” windows (wait till you see how I plan to pull that off…I hope) in pink.  The next level up will have a princess tiara wrapped around it which will be done in white or light pink royal icing filigree and accented with lustre dust.  And at the top…The princess herself.  I will transform a self-portrait that she drew into a royal icing topper with a fondant ribbon wrapping around that wishes her a Happy Birthday.  The cake itself will be funfetti or chocolate or a combination of both with pink buttercream frosting.  Lots of work, but I love to do it.

The only thing is that with a major project like this, plus preparing for the party itself and making her a new dress for said party, I will have very little time to complete / post the many other projects that I have in the works.  I apologize to my loyal followers and look forward to sharing pics of the final project with you.

In making the Father’s Day Fish Cake, I had a chunk of cake that was not used after I shaped it.  I cut it in half and stacked it, frosted it, then decorated it with green and blue icing and some royal icing pieces that I had made while playing around after making the fish scales for the Father’s Day Cake.

I decided that it would be a nice treat for my friend Rachel who has a sweet tooth that is always appreciative of my baking.  Especially since our family certainly doesn’t need any extra baked goodies around.

The board was cut to fit into a box and I added those brown straps so that my friend Rachel could lift the board out of the box without damaging the cake.  I stopped by the restaurant where she works to surprise her with it, and she was nearly speechless.  Several of her coworkers gathered around and commented as well and I had to warn her to hide it from the guys as they were on the verge of drooling.  🙂  Always nice to hear people’s comments on my work, even when it is just a tossed together playful little piece.

Here is the fish cake that I made for our Father’s Day celebration.  It was a devil’s food cake with a thick layer of chocolate frosting.  The scales, waves, and eye were made with royal icing and the detail on the tail and the mouth were made with gel icing.  It wasn’t as OCD perfect as I wanted, but since I had my 4 1/2 year old helping me and the boys (18 months and 3 years) climbing all over while we worked on it, I have to be a bit forgiving.

Army Cake

A quick two layer cake that I tossed together for a friend of my husband’s.  Chocolate cake and homemade chocolate butter cream frosting.  It was my first attempt at chocolate frosting and I discovered that you can improve upon homemade frosting.

A front view of the details on the Watermelon Truck I made for my son’s 3rd birthday.

A bunch of green Jelly bean watermelons contrasted nicely with the watermelon pink of the truck.  It was supposed to be red, but the pink worked better with the blue and green cars.

The cars were decorated with homemade butter cream frosting and candy details.
